Good morning from the big comfy chair in my playroom. I have been making my grocery order and trying to decide meals for the week amidst my oldest daughter yelling out to her brother, “Simon, you are absolutely disgusting me.” She is 3.
We have returned from our final travel weekend, and I’m hanging up the summer hat. On our six hour drive home yesterday, we popped in this gorgeous church on a hilltop in Windthorst, Texas. Was a lovely respite on an eternal drive back to Oklahoma and I will be glad not to make it again for a while.
Goodbye yellow brick road, I’m positively finished with burgers and watermelon.
Thought I’d share a quick post on my meal ideas for the week should this be in any way inspiring to someone.
Here we have it.
Spaghetti and meatballs — Evelyn voted for this and I am more than happy to put this on the lineup. After a weekend of sandwiches and fajitas, pasta is sounding just right. I’m planning on my classic recipe, and please go read Issue No. 24: If you give a mom a meatball for my full history of meatball making.
Cashew Butter Chicken — I’m making Half Baked Harvest’s recipe, which I normally avoid because she tends to be so laborious. But this one is just too good to skip. Going to roast up some okra on the side. And of course, basmati rice.
Roasted chicken + veggie bowls with brown rice — going full autumn harvest bowl inspiration with this one. I’m planning to roast sweet potatoes, Brussels sprouts, and chicken thighs and serve that on top of baked brown rice pilaf. I’ll make some kind of yummy dressing and top with goat cheese and arugula. I’m still sad Walmart doesn’t appear to carry pomegranates so I’m probably going to have to go hunt for one at a different store this week. What is a harvest bowl without pomegranate seeds?
Some extra things on hand — I got supplies to make a batch of ham and gruyere breakfast croissants. Don’t worry, I am not making croissants myself this time. I’ll slice up the croissants, add the ham and cheese, and make a quick glaze of Dijon, honey, and butter to brush on top. Wrap these suckers in foil and I’ll be eating breakfast straight out of Paris every morning. Last but not least, planning to make some GF zucchini bread.
